Ensis is a genus of bivalve molluscs in the Pharidae family. They are of medium size and live in coastal areas.\n\nIn countries like Spain, the United States, among others, they are commonly known as navajas, muergos, longorón, or razor fish, due to the special shape of their shell in the shape of a razor handle, the cutting instrument. 2​\n\nIt is a species widely used in cooking, marketed fresh or canned. In many places it is an important supplement to the diet. The shells are brittle and can be easily damaged when digging for them.\n\nEnsis species prefer the clean sands of exposed beaches. They are able to dig very fast and hide deep. There are various methods to capture them.

The grilled sauries will also be garnished with kabosu, a citrus fruit from Usuki, Oita Prefecture. The best part—the sauries will be handed out for free!

The fisherman on the island of Usedom in the Baltic Sea had collected his fresh catch in a tin bucket. He was standing a little to one side, repairing his nets. The herrings shimmered silvery blue in the bucket. The individual scales of the fish skin and the eyes of the animals are clearly visible. It's not much, but the fisherman is happy.
